ORANGE WINE
5 Seville oranges
5 sweet oranges
8 oz. chopped raisins
3 1/4 Ib. sugar
1 gallon water
Campden tablet
Pectozyme
Nutrient
Sauterne yeast
Thinly pare two Seville oranges and three sweet
oranges, chop the raisins, add 2 1/2 Ib. white sugar and pour on the
boiling water. When cool add the fruit juice from all the oranges and
stir in the nutrient and yeast. Ferment for four days, then strain and
continue the fermentation by adding the remaining sugar in three 4 oz.
doses. If it is possible to ferment this wine any longer by additional
sugar, by all means do so, but because it contains a high acid and
alcohol content it will take a long time to mature adequately; at least
two years and possibly three. By this time, however, all the bitter
flavour goes and the wine is left smooth and rich. A glass of gin added
to each bottle at bottling time gives a 'satin' finish to the wine.
