MIXED FRUIT WINE
4 to 5 Ib. mixed fresh fruit, such as red and black currants, red and
white cherries, raspberries, gooseberries, imported plums et., etc.
2 1/2 lb. sugar
1 gallon water
Campden tablet
Pectozyme
Nutrient
Madeira yeast
6 oz. chopped raisins
Wash and prepare the fruit (strig, stalk, stone,
etc.), place it in the mashing vessel and pour on boiling water. When
cool mash the fruit with your hands and add one Campden tablet and a
teaspoonful of pectozyme. Next day add the nutrient and yeast and
continue the fermentation for four days, pressing down the fruit cap
twice each day. Strain, stir in the sugar and continue the fermentation
in the usual way, adding up to another 6 oz. of sugar during
fermentation.
