MILK STOUT
Ingredients as above for stout, together with 4 oz. of milk sugar known
as lactose.
Make as for stout. The lactose is not fermentable by
granulated yeast (Saccaromyces cerevisiae) and so the beer retains a
sweetness more pleasing to some palates than ordinary stout. More
lactose may be used than recommended ii you desire a sweeter stout.
