Leila Cottage Brewery was established in November 2007, making it the first brewery in Ingoldmells since 1898. At first, it was to be a hobby for both the landlord and the head brewer, initially only with half barrel (18 UK Gallons) plant, but the popularity of the beer grew and an expansion of the brewery was introduced to 2 and a half barrel (90 UK Gallons). The Brewery has gathered much interest locally and nationally. We cater for bus tours from CAMRA or any other organisations, however, prior booking is recommended for these outings.
Real ale enthusiasts are always welcome and if time permits you are welcome to be shown around the brewery and if available meet the brewer and/or landlord in person. The brewery can also be found in the Good Beer Guide.
Our beer can be purchased in bottles, as well as over the bar at the countryman. Leila Cottage Brewery (LCB) still has a small production with an average of just over 2 barrels (~80 UK Gallons) a week, but with popularity soaring, LCB has already seen 1 expansion with further expansions looking inevitable. One possible expansion option at the present time would be the purchase of extra fermenters to allow more brews per week.
During November 2009 we purchased and put to use our very own bottling plant. This enables us to now brew, ferment, barrel and bottle our beers all on site at the Countryman in Ingoldmells. Previously all our beers were bottled by our good friends at Fulstow Brewery in Louth.
Change of breweries - Expansion Jan 09
During the winter period of 08/09 LCB was expanded from a half barrel (18 UK Gallons) plant, to a 2 and a half barrel (90 UK Gallons) plant. This enabled us to produce 8/9 casks of beer per brew as oppossed to just 2. This was a huge improvement as during the summer of 08 we struggled to keep up with demand for our beers. Since the upgrade we have gone from strength to strength, providing the countryman and various beer festivals with good quality Lincolnshire beer.

Naming of the Brew
Our brews so far have been:
Ace Ale (3.8% ABV)

Leila’s Lazy Days (3.6% ABV)

Leila’s Lincolnshire Life (4.2% ABV)

Black Jack (3.8 ABV)
Leila’s Ale (3.8.% ABV)
The naming of the first brew was voted upon by locals who frequent the pub. The most popular choice was "Ace Ale", This was brought about from the old name for the pub from the 80s, "The Ace of Clubs". "Ace Ale" is a typical session bitter brewed to be enjoyed as an "all rounder" with a reasonable roast malt body and a gentle hop bitterness flavour.
"Black Jack" was our second brew, first created in February 08, it was very similar to Ace Ale, except was very dark. This gave Black Jack a fuller body than its close sister beer. This brew was discontinued later on in 08 and no plans are a foot to produce this brew again.
"Leila's Ale" was brewed on our small plant, towards the end of its use, in October 08. This was a one off brew to experiment with different malt and hop varieties. This is not planned to be brewed again and was replaced with "Leila's Lincolnshire Life".
"Leila's Lazy Days" was introduced in the summer of 09. This is a light IPA beer produced to be served slightly chilled and enjoyed in the Lincolnshire sunshine. Its taste is slightly citric, with a light caramel edge, and is very easy to drink.
"Leila's Lincolnshire Life" was introduced in October 09. This is a dark full bodied, malty bitter with a toffee aroma and taste. It uses a mix of 3 varieties of hops and 3 varieties of malt to deliver its unique and full taste.
"Leila's One Off" was introduced in January 2011 to celebrate LCB's 100th brew. It was originally brewed as its name suggests, a one off, however after proving very popular it was continued as a regular brew. One Off is very dark, full bodied bitter which verges on being a stout. at 5.1% ABV it is currently the strongest ale produced by LCB. It merges together 2 varieties of hops and 4 varieties of Malt to deliver its strong and memorable taste.
